La Véloccitanie runs 237 kilometres from Seuil de Naurouze to Béziers. The official route has six stages: it begins near the Canal du Midi, crosses the farmland of Lauragais and the Haut-Languedoc regional park, then follows the former PassaPaïs railway. The ride changes character along the way, moving from canalside paths to hills and vineyards.

The route planner lists about 132 kilometres on cycle paths and 89 kilometres on roads shared with traffic. Surfaces vary too: roughly 80 kilometres are marked as rough. Check each stage map, tyre choice and time allowance before setting out rather than calculating the whole journey from a single average speed.

Signs are not equally permanent throughout. They are provisional on part of the opening section towards Revel, and the description recommends an alternative connection between Puimisson and Béziers station. Riders who do not want a week-long trip can choose an individual stage; the latest official map and local conditions are worth checking before departure.
